海鲈鱼,胡萝卜泥,柠檬叶,用纸包裹烘焙
Ingredients 配料
4 Snapper fillets 4 海鲈鱼排
500 g Carrot puree 500克 胡萝卜泥
12 pc Lime leaf 12个 青柠叶
2 pc Red chili 2个 红辣椒
4 stick Lemon grass 4个 柠檬草
Carrot puree 胡萝卜泥
1000 g Carrots 1公斤 胡萝卜
50 g Butter 50克 黄油
Method
1. For carrot puree, peel carrots and cut into equal sized pieces. Cook in salted water until very soft. Puree in the blender and finish with butter and seasoning.
2. Puree the lemon grass.
3. Marinate the fish with salt, pepper and lemon grass puree.
4. Place carrot puree into an oven proof dish.
5. Place fish on top.
6. Add lime leaf and sliced chili.
7. Wrap with baking paper and bake in the oven at 180℃ for 25 minutes.
8. Serve with brown rice.
烹调步骤
1. 胡萝卜泥:胡萝卜去皮,然后切成大小一样。在盐水中煮直到变软。用粉碎机打成泥,然后加入黄油,调味。
2. 将柠檬草打成泥。
3. 用盐水、胡椒和柠檬草泥把鱼腌制一下。
4. 把胡萝卜泥铺在一个可入烤箱的盘子里。
5. 将鱼放在胡萝卜泥的上面。
6. 再加入柠檬叶和切好的辣椒。
7. 用烘焙纸包裹,然后放入烤箱中,以180度烘烤25分钟。
8. 烤好后,放上黑米上桌。
