How to cook 川北凉粉（酸辣粉）
“To win one’s heart, you must catch his or her stomach first.” The boy whom I love so much likes eating Clear Noodles in Chili Sause. So here are the four steps to cook it.
First, cook the clear noodles in boiled water. The main ingredient clear noodles were usually made from sweet potato starch. Then put them in cold water.
Second, fry the peanuts and sesame seperately. While frying the peanuts, add some oil to avoid charring them.
Third, fry red chili powder with about three-tablespoon oil, using medium fire, until it smells good. Put some broadbean sause in and continue frying. Then pour some chicken soup into the pot. Boil them all, add adequate salt, sugar and soy sauce.
Fourth, put the former clear noodles in a bowl, removing excess water. Pour the soup into the bowl. Add some fine-grained coriander, mashed garlic, chopped green onion, peanuts, sesame, seasame oil and vinegar. Mix them thoroughly. The dish is done.
